It’s hard to define Elizabeth Blau’s groundbreaking impact on Las Vegas’ culinary landscape. She’s the owner and operator of six restaurants, including Summerlin’s Honey Salt, Buddy V’s at The Venetian Resort Las Vegas and the Michelin-lauded Crown Block in Dallas. In 2003, she founded Blau + Associates, a strategic restaurant planning and development company that’s the driving force behind elevated dining and beverage concepts across the U.S., Middle East and Asia. And for the third time, the Cornell University graduate has been named a semifinalist for the James Beard Award for Outstanding Restaurateur—the only Nevadan in this year’s pool.

While her accolades span decades, she’s heading toward some of her most exciting years yet, working hand-in-hand with Wynn Resorts to bring an exclusive portfolio of F&B concepts to Wynn Al Marjan Island in 2027. That lineup includes an exclusive French-American steakhouse by the legendary Alain Ducasse and the Middle East debut of the h.wood Group’s Delilah, among 22 other anticipated concepts.

Closer to home, on April 19 and 20, she and her fellow Women’s Hospitality Initiative co-founders will host the second annual Women in Hospitality Leadership Conference at Wynn Las Vegas, a premier networking event featuring panels, workshops and mentorship opportunities.

Here, Blau reveals the Las Vegas hot spots currently catching her eye—and taste buds.
