Pura Vida’s Fire Egg Bowl
Ingredients
- 1 oz spinach
- 1 cup quinoa
- 1 oz onions and red peppers
- ½ avocado
- 3 large eggs
- 1 oz feta cheese
- Salt and olive oil
Directions
(Prep time: 10-20 minutes)
- Fill a medium-size saucepan with 1 cup of water and place on the stove to boil over medium-high heat. Rinse the quinoa and pour into the saucepan, then cook quinoa until water is fully absorbed. This takes about 10 to 20 minutes. Once cooked, remove the pot from heat and set aside to let the quinoa steam for 5 minutes.
- In a separate small pan, add 1 inch of water and cover with high heat. Once the water boils, add eggs and let them boil for 6 minutes. Once complete, remove the eggs and put them under cold water until they are ready to peel.
- Fill a medium-sized bowl with fresh spinach and add quinoa to cover the base of your bowl.
- Next, add your onions and red peppers as well as your avocado.
- Once cooled and peeled, cut your eggs in halves and place them in the bowl.
- Add a sprinkle of feta, or more to your liking.
- Finally, add a dash of salt to taste, as well as a light drizzle of olive oil.
