The group is once again pushing the envelope on the unexpected with Chateau ZZ’s upcoming brunch menu, which will launch this fall. With MFG’s signature flair and a unique blend of old-world hospitality, the brunch radiates over-the-top opulence, attention to detail and drama, inspired by the building itself. With an offering that elevates the brunch experience with theatrical spectacle, ensuring every element matches the brand’s unique identity. With the European-style chateau serving as the perfect backdrop for the new brunch offerings, the building itself is a nod to the culinary offerings.

“Chateau ZZ’s is our version of old-world hospitality reimagined through a tropical lens–opulent, playful and emotionally charged,” says Mario Carbone, the founder of MFG. “It’s extravagant because that’s what the space demanded. There’s a richness to it, but also control. Everything–from the materials to the lighting to the choreography of service—is about building drama and restraint in the same breath.”

Described as old-world charm through a Miami lens, Chateau ZZ’s is like stepping into the city’s history, mixing lavish French-inspired architecture with the soulful flavors of Mexico. The result is as much about the experience as it is the food. Representing a new chapter for the brand, the restaurant serves as the first Mexican concept.

“We’ve had a deep appreciation for the cuisine for years, but this was the right moment, the right canvas,” Carbone notes. “But more than that, Chateau ZZ’s is about contrast—a French-style mansion with a soulful Mexican menu, luxury service with bold, expressive flavors. It made us think differently about narrative. That tension, that unexpected collision, is what gives the restaurant its energy.”

With concepts launching across four different continents, it’s clear that the same mindset is driving Major Food Group’s expansion. From CARBONE London to a new concept in Las Vegas, MFG’s dedication to building immersive experiences is evident worldwide.

“The soul of each place informs the concept,” he shares. “We’re evolving, not replicating. Every new restaurant reflects its surroundings, but carries our signature: immersive, stylish, emotionally charged. The structure, the energy, the cuisine, they all speak to place, but with our voice.”

In London, MFG is reimagining CARBONE within an Eero Saarinen-designed building that demands refined elegance, while in Dubai, it’s about presence and scale, built to match the grandeur of Atlantis The Royal.

Despite the brand’s rapid global expansion, Carbone insists that creative control and consistency remain key to success. + “We stay intimately involved— obsessively, really. Every detail matters, from the playlist to the uniforms to how a cocktail is presented. The real consistency comes from our internal compass,” he says.
