Mussel Man

Mussels and beer: a concept simple enough, it just might work. At least, that’s the hope for Fisk & Co. executive chef Austin Fausett, whose Midwest homecoming after nine years in Washington, D.C., brings his tantalizing take on seafood to the Kimpton Hotel Monaco in the Loop. Although the entire menu features enticing dishes, front and center are mussels sourced from Prince Edward Island and Maine’s Acadia Aqua Farms bathed in a selection of sauces like a spicy coconut curry broth ($20), tomato-saffron ($22) and a garlicky white wine (pictured, $18). “I think they’re the best mussels I’ve ever had,” Fausett says. “They’re a little richer, creamier. They’re special.” Wash it all down with drafts of a seasonal rotation of Hopewell beers, Moody Tongue’s Aperitif pilsner or a handful of other local brews, and savor the simplicity. 225 N.
