What do you do if you’re a bar owner with a spare mezzanine? If you’re ABV owners Todd Smith, Ryan Fitzgerald, and Erik Reichborn-Kjennerud, you open another bar—four of them, to be exact. In late January, the Mission bar’s mezzanine became home to Over Proof, a quarterly pop-up bar that will devote each of its three-month life spans to the exploration of a single spirit, with a short menu and thematically appropriate decor to complement it.

Flip-Flop, its current iteration, is a showcase for all things rum, with five cocktails that include a Presidente and a Pink Flamingo made with rhum agricole, lime, pineapple gum, absinthe, and ABV’s own blend of aperitivos. Colin Hilton’s accompanying six-course tasting menu pays tribute to the rum-producing (and guzzling) regions of the world—think Trinidadian Trini Chow Mein and New England–style stuffed-and-baked clam—while vintage rum posters paper the walls and tropical glassware accents the tables. The festivities last until April 20, after which whiskey stages a takeover. Over Proof is a reservations-only affair with two seatings every night; tickets are $80 and can be found through the Over Proof website.
