Equipment: The It Grill

Find out what all the best chefs are using

What do TBD, Coqueta, and Ryan Farr’s 4505 Meats have in common? A Grillworks grill. Owner Ben Eisendrath, whose father, Charles, founded the Washington, DC–based company over 30 years ago, says that Grillworks has experienced “an explosion in interest”—he’s already sold grills to some 15 Bay Area chefs (with about 10 more custom projects in the works). TBD’s 150-pound fire-breathing beasts—equal parts grill, hearth, broiler, and smoker—come with custom features like heat-resistant crank wheels for adjusting the grate height. Handmade from stainless steel, the grills run from $2,800 to $37,000. If that’s not fancy enough, Eisendrath says, “the sky’s the limit.”
