Timber & Salt
At this downtown spot, partner and bar manager Brian Matulis is tasked with developing the cocktails ($10 to $12). Timber & Salt's aged rum Old-Fashioned “is a Caribbean riff on the classic,” says owner Stewart Putney. “We use Venezuelan, Solerastyle aged rum from Santa Teresa and Mauby syrup.” The menu also boasts a large selection of amari, particularly the bittersweet herbal spirit fernets. Come in during the early evening to watch the staff cut into a giant block of ice with a cleaver and mallet. “We make our own clear ice,” notes Putney. “The big rocks look cool and keep drinks cold with less dilution.” 881 Middlefield Road, Redwood City, 650.362.3777

Paper Plane 
Owner George Lahlouh describes the cocktail development at Paper Plane as a “group process” that he spearheads along with bar manager Patrick Braga. While the offerings change seasonally, one of the most popular choices, Spice of Life ($11)—a vibrant and refreshing cocktail made with aquavit, aperitif wine, lime juice and housemade cucumber soda—has been around since Day One. There’s also a selection of punches on tap, so you can get a glass of Pimm’s or Kentucky Buck for $8, or a whole pitcher for $42. Not sure what to order? The Bar at Quattro
Silicon Valley is known for innovation, and that’s exactly what the bar team at Quattro is doing in the realm of cocktails. Lead mixologist Adam Chick and his crew are influenced by the area’s premium and seasonal ingredients. Case in point: The Backyard Summer Peach ($16), the brainchild of bartender Greg King, incorporates freshly grilled local peaches with bourbon and a hint of rosemary. “My love of bourbon inspired this drink,” says King. Order one and enjoy it on the newly refreshed patio, where live entertainment can be enjoyed on Friday nights during the summer.
