The much-awaited subterranean Southeast Asian-inspired restaurant-lounge hybrid at Williamsburg’s CODA Hotel, Bohemia, will bow on December 15. The ultra-cool restaurant is brought to life by Full:Life Hospitality, the hospitality group taking NYC by storm with concepts such as Williamsburg rooftop bar Creatures of All Kind and LES electronic music venue Virgo.

Bohemia brings a new and exclusive addition to Williamsburg’s nightlife scene thanks to its creative takes on classic Southeast Asian flavors in a chic, Bali-inspired setting. Located on the basement floor of the gorgeous 64-room boutique hotel CODA Williamsburg Hotel, Bohemia completely transports guests from NYC to Southeast Asia.
“The idea behind Bohemia was to inspire a free-spirit and non-conventional approach to food and beverage” says co-founder Thatcher Shultz. “Working with the CODA brand and hotel, which sources goods and furnishings from Bali and Los Angeles, allowed us to bring this vision to life and create this feeling of escapism within the restaurant.” Shultz brings experience from Manhattan hotspots Make Believe at the SIXTY LES Hotel, Her Name Was Carmen and Kind Regards.
New Zealand-born chef Anthony Hoy Fong crafted the menu, which is inspired by the flavors of Southeast Asia’s iconic street foods. Menu highlights include pork belly bao with bumbu spices, spicy mayo and pickled cucumbers; Veg-Ahn mi lettuce cups with daring “chicken”, daikon, carrot and basil; scallop ceviche with salmon roe, Leche de jaguar, chile and charcoal salt; and crispy lamb ribs with kecap manis, cumin-coriander crust and charred lime.
Beverage director Katie Auth brings delicious craft cocktails and wines to Bohemia’s beverage program. Highlights include the Garden of Eden with gin, yellow chartreuse, celery juice, lemongrass syrup and lemon; the When in Indonesia with pueblo viejo, Aperol, lime juice and salted watermelon cordial; and the Con Piña with gin, Giffard Caribbean pineapple and blanc vermouth.
The Southeast Asian influence extends throughout the hotel, which was designed by the beloved California-based hospitality brand Coda Studio. Coda Studio began as a design firm in Malibu and Bali, and after decades of designing homes and hotels worldwide, opened CODA Hotel as the company’s flagship hotel.
“Bohemia and our rooftop bar Creatures of all Kind both transport me to Southeast Asia, where I have traveled and spent lots of time,” says co-founder Duncan Abdelnour. “Our goal was to transport guests to a tropical environment in the heart of Williamsburg with the region’s creativity, and culture from the elevated music programming to the colorful ambiance.”
